Jasmine rice cooks well in the Instant Pot, so if you struggle with cooking rice on the stovetop, you're in luck. No more burned rice sticking to the bottom of the pan.

Cooking in the pressure cooker is also fast! When you consider the time it takes for stovetop rice to come to a boil and cook (compared to the time it takes the Instant Pot to come to pressure, cook, and release), the pressure cooker wins by about 10 minutes.

Jasmine rice is a slightly sticky fragrant rice that's similar to basmati. It's widely used in Thai and Vietnamese cuisine, but I use it for just about everything, even my slow cooker Hawaiian meatballs.

Water to Rice Ratio

While you might be used to cooking rice using 2 cups of water for every cup of rice, rice cooks a little differently in the pressure cooker.

The perfect jasmine rice water ratio for the Instant Pot is 1:1.

That's one cup of uncooked rice and one cup of water, or two cups of rice to two cups of water.

What if I want to make more? You can double or even triple this recipe while maintaining the rice ratio and cook time (see the recipe card). Just be mindful of your Instant Pot's max fill line.

What if I want to make less? According to the Instant Pot user manual, you need at least one cup of liquid to bring the pot to pressure, therefore you cannot half this recipe.

Do I use the rice setting? My instructions use the manual setting.

Instructions

Run water over the jasmine rice until the water runs clear.

Close the lid and turn the venting knob to sealing. Pressure cook on HIGH pressure for 3 minutes. It will take about 5 minutes to come to pressure before the cooking time begins. Follow the cooking time with a 10-minute natural release. After, turn the knob to venting to finish releasing pressure.

Tip: You don't have to use a rice paddle, but I find they are very effective and efficient at scooping rice.

Equipment

Instant Pot: I use a 6-quart Instant Pot Duo. I prefer to cook rice in the Instant Pot instead of stovetop because I never deal with boiling and bubbling over or rice sticking to the bottom of the pan.

Fine mesh strainer: I use a large mesh strainer to rinse my rice in the sink (see my tips below on rice rinsing below).

Rice paddle spoon: Rice paddles are great for scooping rice from the pot without mashing the rice or creating a mushy texture. They easily scrape the bottom of the pot so there is no rice left behind. My Instant Pot came with a rice paddle, but you can find affordable rice spatulas if yours did not.

Rinsing Rice

Strainer Method: Using a large mesh strainer is the fastest way to rinse rice. I run water over it and rub the rice with my fingers until the milky water runs clear.

Bowl method: It is also easy to rinse rice in a bowl if you do not have a strainer. Cover the rice in water and run your hands through the rice. Dump the water and repeat until the dumped water runs clear.

Nagi at RecipeTin Eats writes that stovetop jasmine rice does not need to be rinsed, but I find unrinsed rice in the pressure cooker becomes gluey. Rinsing rice can remove surface starch.
